Hi, I'm here!

Hello! I am back on my blog! It's been months and months! I am getting my cookbook ready to be sold in 2012!!!! And I have 4 more videos coming out in November! Please look for these wonderful events!!!! And tonight I made the very best Chicken Quesadillas! Delightful! And some yummy salsa! Still cooking every day! Sweet Melissa's Catering is going strong! It's been 18 months!!! Can you believe it? I cannot! Have a great week! And thank you all for your support!!!!

*Peachy Beef Toss*

*8 ounces cooked roast beef*
*4 cups torn romaine*
*3 cups torn fresh spinach*
*3 medium peaches, peeled, pitted and sliced*
*1 avocado, peeled, pitted and sliced*
*12 cherry tomatoes, halved*
*1/2 cup of salad oil*
*3 tablespoons vinegar*
*1 tablespoon prepared horseradish*
*1/2 teaspoon worcestershire sauce*
*Cut beef into julienne strips....In salad bowl combine romaine, spinach, peaches, avocado, tomatoes and beef strips. To make dressing, in screw-top jar, combine salad oil, vinegar, horseradish, worcestershire, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Cover and shake well to mix. Pour dressing atop salad; toss to coat meat and veggies. Makes 8 small servings.*

The Irish Stew was a success!!!

We enjoyed my Irish Stew last evening very much!!!! I think we will have it again for our left-overs tonight! I am thinking about cooking a delightfully moist pound cake today, as well! The problem with cooking pound cake? Well, we eat all of it in just a few days!!! LOL! But wow! It's so good!!! I love it in the morning for breakfast! I spread a little butter on it....and toast it for a couple of minutes...and it's the best toast you will ever have! LOL!

I hope everyone is enjoying this gorgeous March! The wind is a bit brisk today! But the weather is so nice! I have the windows open for some fresh air for the doggies! They love it! However, they bark at every squirrel that runs by! And every person that walks by the doors!

Good Morning!!!

Happy March 8th!!!! How does some Irish Stew sound for tonight's dinner!!!!!?????? I am thinking it sounds delicious! It's the month of spring! And here's a secret.....It's my birthday month! LOL! I love this time of the year!!!! Try this recipe tonight!!!

Irish Stew!
1 pound of lamb
1 pound of potatoes
1 pound of carrots
1 pound of onions
1/4 teaspoon of thyme
salt and pepper to taste
Preparation: Put lamb in cold water with thyme......bring to a slow boil.....cook for 2 hours.....add the veggies and season with the salt and pepper to taste.......keep cooking until veggies are tender.......about 1 more hour!!!! Add buttered green cabbage on the side! Wow!!! This is a delicious meal that can be served several times! Enjoy!!!

February 28th, 2011

Wow, two months down for 2011! Still enjoying my cooking! Today, I actually cleaned! LOL! I am great at cooking...in my mind. Not so great at cleaning or doing laundry! LOL! I cooked a wonderful mushroom chicken with steamed rice and green beans over the weekend! We had Key Lime Pie for dessert!!! So delicious! We are still having left-overs!!! LOL! One more day of those.....LOL! I like cooking lots of chicken breasts at once....you can use the chicken for so many dishes!!! Chicken Sandwiches, Chicken Salads and Chicken and Rice Left-overs!!!! All good stuff! I am gearing up for more deliveries this Thursday! Sweet Melissa's is ready to serve! The holidays were so busy! It has been a bit more slow the first 8 weeks of 2011! But this is to be expected! Right? I look forward to the spring!!! March 21st is my birthday! Always, always, always a fun day for me! LOL! I love celebrations! As you can imagine, I cannot wait for the big day! I hate that it's on a Monday, however! Lots of restaurants are closed on Mondays! :( Have a wonderful week!!! Happy New Year! 2011! Wow!

Okay, it's January the 19th! And I am finally writing in my blog in....let's just say....forever! Sweet Melissa's Catering really took off in 2010! So I hate to say that I have been too busy to write, but I have been busy! And it's been a blessing! Just a blessing! The holidays brought new and old clients ordering, ordering and ordering from Sweet Melissa's Catering! I cooked everything from Honey Maple Ham to Caramel Cakes to Red Velvet Cakes to Macaroni and Cheese and every other cake you can imagine in between!!!! It was fabulous! I am so excited that after leaving a wonderful career at CNN....I have started my 2nd career with success!!!! Sweet Melissa's Catering has been a blessing! I have now shipped to 11 states! And some repeatedly! So...that is good news! :)

I have been thinking about my cookbook! And I realize I have been quite slack in getting those recipes in the format that I need to get this book published! I think I may have to hire someone to do some typing! Anyone out there who wants a typing job? :)

Well, please continue to read my blog and know that I am loving my new career! Sweet Melissa's Catering is a success!!! Yay!!!! Have a wonderful 2011!

October!

Wow! I have not been blogging in forever! I am so sorry! I have been very busy with "Sweet Melissa's Catering"! I have been all over the state this month! I spent 4 days in Atlanta last week! It was great! I saw so many old friends! And catered for a sweet friend's 50th Birthday Party! She looks great! It was so very nice to get home and serve all the folks I have known forever!
